Finding which translation agency that suits you can be hard because a lot of these agencies claim that they're good enough. It is really an advantage if you know someone who's been in contract with a translation agency long enough because you can ensure that their services are worthwhile. But then if you don't know anyone who's affiliated with any translation agency, then it would be better if you start looking for your own and participate on forums and find anyone who can help you out. Good specialties are general enough to ensure a consistent workflow but not overly general that it becomes too difficult to target and find specific customers that could be good candidates for your translation services in these industries. I would say that there is no "ideal "number - some translators have a single specialty (e.g. renewable energies), and others have a wider variety that may include some smaller niche, specialties (e.g. commercial construction, wind energy, Aboriginal health care). If you're just starting out, it's a good idea, as Oliver mentioned, to work on getting experience you can show potential clients... and with any luck, you'll come upon some specialties that really allow you to showcase your talents and interests!
